Ingredients

  • 600 g 600 Zucchini

  • 250 g 250 Feta Cheese

  • 3 3 Eggs

  • 1 1 Onion, finely chopped

  • 5 5 Spring Onions, finely chopped

  • 1/2 bunch 1/2 Parsley, finely chopped

  • 10 10 Mint leaves (or 1 tsp dried mint)

  • 1 tsp 1 Salt

  • Pepper, to taste

  • 120 g 120 Melting Cheese

  • 100 g 100 All-purpose Flour

  • 30 g 30 Breadcrumbs

  • 30 g 30 Olive Oil

  • Vegetable Oil for frying

How to make Zucchini Fritters – Kolokythokeftedes

  • Trim the ends of the zucchinis. Grate the zucchinis using the coarse side of a grater and place them in a bowl. Add half a teaspoon of salt and mix well.
  • Transfer the grated zucchinis into a colander and let them drain for a while to remove excess moisture.
  • In a large mixing bowl, whisk the eggs. Add the olive oil, finely chopped mint, parsley, spring onions, and dry onion. Mix thoroughly.
  • Add the grated zucchinis to the egg mixture and stir well.
  • Season with pepper and add the flour, mixing gently.
  • Add the breadcrumbs and mix again.
  • Crumble the feta cheese and grate the melting cheese; add both to the bowl and combine everything carefully.
  • Let the mixture rest for about 10 minutes.
  • Line your working surface with parchment paper and lightly dust it with flour.
  • Take small portions of the mixture and shape them into small patties or fritters.
  • Heat enough seed oil (or olive oil) in a frying pan over medium-low heat.
  • Fry the fritters one by one, cooking each side until golden brown.
  • Place the cooked fritters on absorbent paper to remove excess oil.
