Ingredients

  • 4-5 4-5 Zucchini

  • 200 g 200 Yellow Wheat Flour

  • 100 g 100 Cornmeal

  • Salt, Pepper, Smoked Paprika

  • 1 pinch 1 Thyme

  • 1 pinch 1 Oregano

  • Corn oil or sunflower oil, for frying

How to make Fried Zucchini

  • Trim the ends of the zucchinis and slice them into 0.5 cm (ยผ-inch) thick rounds.
  • Place them in a bowl, sprinkle with a little salt, and gently mix with your hands.
  • Let the salted zucchini rest for 30 minutes to draw out excess moisture.
  • In a large shallow tray or baking dish, combine the wheat flour, cornmeal, salt, pepper, smoked paprika, thyme, and oregano. Mix well.
  • Heat corn oil in a frying pan over medium heat until hot.
  • Dredge each zucchini slice in the flour-cornmeal mixture, pressing slightly to coat both sides.
  • Fry the zucchini in batches for 4โ€“5 minutes, until golden brown and crispy.
  • Remove with a slotted spoon and place on a tray lined with paper towels to absorb excess oil.
  • Serve hot and enjoy immediately.
