  • For the Pastry Cream
  • 300 ml 300 Milk

  • 1 1 Egg

  • 70 g 70 Sugar

  • 30 g 30 Cornstarch

  • 25 g 25 Butter

  • 1 1 Vanillin Capsule

  • 1 pinch 1 Salt

  • For the Caramel
  • 150 g 150 Sugar

  • 120 g 120 Heavy Cream, warm

  • 30 g 30 Butter

  • 1 pinch 1 Salt

  • For the Batter
  • 3 3 Eggs

  • 150 g 150 Sugar

  • 150 g 150 Sunflower Oil

  • 50 g 50 Greek Yogurt

  • 280 g 280 All-purpose Flour

  • 15 g 15 Baking Powder

  • 650 g 650 Apples, peeled and diced

  • 1 1 Vanillin Capsule

  • 1 pinch 1 Salt

How to make the Apple Cake

  • Caramel
  • Melt the sugar in a saucepan.
  • Add the warm heavy cream and stir well.
  • Add butter and salt, set aside.
  • Pastry Cream
  • In a saucepan add milk, egg, sugar, cornstarch, vanilla, and salt.
  • Cook over medium heat, stirring constantly, until thickened.
  • Add butter, stir, and let cool.
  • Filling
  • Mix the caramel with the pastry cream and transfer to a piping bag.
  • Batter
  • Beat the eggs with sugar until fluffy.
  • Add sunflower oil, yogurt, and vanilla.
  • Mix in flour, baking powder, and salt.
  • Fold in the diced apples.
  • Assembly & Baking
  • Pour the batter into a 28 cm / 11-inch springform pan.
  • Pipe the caramel cream in stripes and decorate with apple slices.
  • Bake in a preheated oven at 180°C / 350°F for 45–50 minutes.
  • Let the cake cool completely in the pan before serving.
