Ingredients

  • 400 g 14 oz Boiled Potatoes

  • 300 g 10.5 oz Melting Cheese, grated

  • 4 4 Eggs

  • 100 g 3.5 oz Bacon, chopped

  • Salt & Pepper

  • 1/2 bunch 1/2 bunch Parsley, finely chopped

  • Cornmeal for coating

  • Vegetable oil for frying

How to make Potato Fritters

  • Peel and boil the potatoes until tender.
  • Transfer to a bowl and mash with a fork or potato masher.
  • In another bowl, beat the eggs and add them to the potatoes. Season with salt and pepper.
  • Add the grated cheese, chopped bacon, and parsley. Mix until the ingredients are fully combined.
  • Shape the mixture into small patties or balls.
  • Coat each one in cornmeal.
  • Repeat the coating once more for an extra crispy crust.
  • Heat vegetable oil in a frying pan over medium heat and fry until golden brown on both sides.
  • Place the croquettes on paper towels to drain excess oil.
  • Baked version
  • Place the croquettes on a parchment-lined tray, drizzle lightly with oil, and bake at 200°C (390°F) for 15–20 minutes, until golden.
