Ingredients

  • 300 g 10.6 oz Spinach

  • 2 2 Eggs

  • 50 g 1.8 oz Milk

  • 50 g 1.8 oz Olive oil

  • 2 2 Spring onions, finely chopped

  • 1 1 Onion, finely chopped

  • 3 tbsp 3 tbsp Parsley, finely chopped

  • 3 tbsp 3 tbsp Dill, finely chopped

  • 1 1 Carrot, grated

  • 100 g 3.5 oz Meltable cheese

  • 150 g 5.3 oz Feta cheese

  • 150 g 5.3 oz Self raising flour

Recipe directions

  • Fill a pot with water and bring to a boil. Add the spinach.
  • Cover the pot with a lid and simmer until the spinach softens. Then, drain the spinach well.
  • In a bowl, add the eggs (beaten), milk, olive oil, and mix. Add chopped green onions, chopped onion, chopped parsley, chopped dill, and mix.
  • Add grated carrot, drained spinach, grated cheese, crumbled feta cheese, and mix.
  • Add the flour, season with salt and pepper, and mix well.
  • Heat a frying pan with vegetable oil over medium heat and wait for the oil to get hot.
  • Add a spoonful of the mixture to the pan and fry on both sides.
  • Transfer the fritters to a plate lined with paper towels to absorb excess oil.
