These simple yet flavorful ingredients will come together to create the perfect bite-sized fritters.

Mixing and Shaping the Tomato Fritters (Tomato Keftedes)

In a bowl, combine the club soda and flour, mixing them together until you have a smooth batter. Next, add the olive oil, salt, and pepper, and continue mixing until well incorporated. Ingredients

  • 330 ml 11 fl oz Club soda

  • 350 g 2 4/5 cup All purpose flour

  • 50 g 1.8 oz Olive oil

  • 500 g 17.6 oz Tomato, chopped

  • 1 1 Onion, grated

  • 1/2 tsp 1/2 tsp Thyme

  • 1 tbsp 1 tbsp Parsley, chopped

  • 1 tbsp 1 tbsp Mint, chopped

  • 1/2 tsp 1/2 tsp Salt

  • 1/2 tbsp 1/2 tbsp Pepper

  • Paprika

  • Sunflower for frying

Recipe directions

  • In a bowl add the club soda, flour and mix.
  • Add the olive oil, salt, pepper and mix.
  • Add the grated onion, chopped tomatoes, some paprika, chopped mint, chopped parsley and mix.
  • In a pan with hot oil add the tomato fritters shaped into small balls and fry both sides until golden brown.
