Ingredients

  • 500 g 17 2/3 oz Village style Sausage

  • 4 4 Colorful Bell Peppers

  • 2 2 Horn Peppers

  • 2 2 Florina Peppers

  • 1 1 Onion

  • 1/2 cup 1/2 cup Olive Oil

  • 1/2 cup 1/2 cup Red Wine

  • 2 tbsp 2 tbsp Tomato Paste

  • 4 4 Tomatoes (coarsely grated)

  • 3 tbsp 3 tbsp Parsley (finely chopped)

  • Salt & Pepper

  • Feta cheese for topping

Recipe directions

  • Sauté the Sausage – Cut the sausages into thick slices and sauté them in a pan with a little olive oil until golden brown. Once ready, remove them from the pan and set aside.
  • Prepare the Vegetables – In the same pan, add the remaining olive oil and sauté the onion until soft. Add the peppers (colorful, horn, and Florina) and cook over medium heat until wilted.
  • Combine the Ingredients – Return the sausages to the pan with the peppers and sauté for 5 minutes. Deglaze with the red wine and let it evaporate for a few minutes.
  • Add the Sauce – Add the tomato paste, grated tomatoes, parsley, vinegar, salt, and pepper. Stir well and cook over medium heat until most of the liquid evaporates and the sauce thickens.
  • Finish with Feta – When the sauce is ready, remove the pan from the heat and add the feta in large chunks. Stir gently to avoid breaking the feta entirely.
  • Serve – Serve the spetsofai hot, accompanied by fresh bread to soak up the rich, flavorful sauce.
