Ingredients

  • 500 g Zucchini

  • 200 g Feta

  • 3 Eggs

  • 50 g Whole milk

  • 2 tbsp Parsley, finely chopped

  • 1 tbsp Mint, chopped

  • 50 g Regato or gouda cheese

  • 80 g Self raising flour

  • Salt

  • Pepper

  • Seed oil for frying

Recipe directions

  • Prepare the zucchini by peeling and grating, then add them into a big bowl.
  • Season the zucchini with salt and pepper.
  • Add the regato or gouda cheese.
  • Add the feta cheese, cut into big chunks.
  • In a separate bowl, whisk together the milk and eggs until well combined then add it to the big bowl with the zucchini.
  • Chop the parsley and mint finely and add them to the bowl.
  • Stir until all ingredients are well combined.
  • Set the mixture aside for 20 minutes.
  • Place a frying pan filled with seed oil on heat.
  • Add a spoonful of the mixture into the frying pan and fry both sides until golden brown.
